Have a lot of leftover holiday ham?? Here's an easy soup recipe you can throw together using left over ham and a few ingredients! My husband killed it last night! Said it was the best ham & bean soup he's ever had so I guess it's a hit! INGREDIENTS
2 Cups (Pre-Cooked) Ham, Cubed 4 Cups Chicken Broth 4 Cans Beans (I used 2 Navy, 2 Great Northern), Drained and rinsed 2 Medium Carrots, peeled and sliced 2 Celery Stalks, Chopped 1/2 Cup Onion, Chopped 1/2 Tsp Garlic, Minced 1 Tsp Chilli Powder 1/4 Tsp Cumin 1/2 Tsp Cayenne Pepper 1/4 Tsp Black Pepper 2 Tbsp Butter DIRECTIONS In a large stock pot, melt 2 Tbsp of butter on medium heat. Add carrots, celery and onion and toss in butter and saute until tender. (Stir regularly, veggies shouldn't brown at all) Once tender, add all other ingredients, blending well. Bring to a boil. Reduce heat and let simmer until heated through and vegetables are tender to your liking * * I let mine simmer for an hour or two, thickens the broth up nicely and lets the veggies get nice and tender
